OOh I made this one up I call it greek chicken roll ups
Take boneless skinless chicken breasts and pound them out til they are thin (btwn plastic wrap so not to damage to boobs)
In a bowl combine feta cheese chopped kalamata olives basil garlic and shallots and a bit of greek salad dressing just enough to moisten the mixture slightly, place about a tablespoon of the mixture in the middle of teh breasts and roll up secure with toothpicks. Pour greek salad dressing over the chicken and bake for about 35 minuets or until doen in a 350 degree oven
Serve with orzo mixed with spinach and feta
