DIRECTIONS


Preheat oven to 400 degrees F (205 degrees C).


Stir together the flour, baking powder, salt and sugar in a large bowl. Make a well in the center. In a small bowl or 2 cup measuring cup, beat egg with a fork. Stir in milk and oil. Pour all at once into the well in the flour mixture. Mix quickly and lightly with a fork until moistened, but do not beat. The batter will be lumpy. Pour the batter into paper lined muffin pan cups.


Variations: Blueberry Muffins: Add 1 cup fresh blueberries. Raisin Muffins: Add 1 cup finely chopped raisins. Date Muffins: Add 1 cup finely chopped dates. Cheese Muffins: Fold in 1 cup grated sharp yellow cheese. Bacon Muffins: Fold 1/4 cup crisp cooked bacon, broken into bits.


Bake for 25 minutes, or until golden.

Ingredients


250g Butter


190g caster sugar


4-5 Eggs


250g strong white flour


20g Baking powder


60ml Milk


100g chocolate chips


150g drinking chocolate


20 squares of dark chocolate, 70% cocoa solids





Method 1. In a mixing bowl, cream together the butter and sugar with a wooden spoon until white and fluffy.





2. Add in the eggs, one at a time, mixing well with each addition, and whisk together for 5 minutes.





3. Sift the flour and baking powder, add to the butter mixture and fold together until well-blended.





4. Add in the milk and the drinking chocolate and mix for 1 minute. Fold in the chocolate chips.





5. Refrigerate the mixture for 2 hours.





6. Preheat the oven to 200掳C/gas 6.





7. Line muffin trays with paper cases, making 20 muffin cases in all.





8. Place a teaspoon of the muffin mixture in each case. Top each case with a square of chocolate, then add another teaspoon and a half of the muffin mixture on top.





9. Bake the muffins for 15-20 minutes until cooked through and risen. Remove and serve warm from the oven.





strawberry and cream muffins ---------%26gt; (makes 12)





2 Eggs


1 tsp Vanilla Extract


280 ml (1 pint) single cream


200g Sugar


400g Flour (plain)


3 teaspoons Baking Powder


1/2 teaspoon Salt


200g Fresh Strawberries





Preheat the oven to 200掳C (gas mk 6, 400掳F). Place the eggs, vanilla extract, sugar and cream in a large mixing bowl and beat together until sugar is dissolved.


In another bowl place the flour, salt and baking powder and mix thoroughly.


Chop the strawberries into small pieces, and stir into the flour. Pour in the liquid, and mix together until just blended.


Line a muffin tray with paper muffin cases, and then fill each case to just below the top with the muffin mixture. Bake the muffins for 20-25 minutes. They are cooked when a skewer inserted into one and then removed comes out clean.

2 Eggs


250ml Milk


125ml Vegetable Oil


100g Granulated Sugar


100g Brown Sugar


400g Flour (plain)


4 teaspoons Baking Powder


1 teaspoon Salt


150g White Chocolate





Preheat the oven to 200掳C (gas mk 6, 400掳F).


Melt chocolate in the microwave. Use a mixing bowl.


Add and whisk the eggs into the melted chocolate, then add oil, sugars and milk and mix. In another bowl place the flour, salt and baking powder and mix thoroughly. Chop the chocolate into small pieces, and stir into the flour. Pour in the liquid, and mix together until just blended.


Line a muffin tray with paper muffin cases, and then fill each case to just below the top with the muffin mixture. Bake the muffins for 20-25 minutes. They are cooked when a skewer inserted into one and then removed comes out clean.

1 egg


1/2 cup vegetable oil


3/4 cup milk


1/2 cup sugar


grated rind of 1 unwaxed lemon


juice of 1 to 2 lemons


2 cups plain flour


3 tsp baking powder


1 tsp salt





Preheat the oven to 200掳C (gas mk 6, 400掳F). Place the egg, oil, milk and sugar in a mixing bowl and beat together until sugar has dissolved. Add the lemon rind and lemon juice and mix.In another large bowl, thoroughly mix the flour, baking powder and salt. Add the liquid mix to the dry, and roughly mix it in - it does not have to be absolutely smooth.


Fill a muffin tray with paper muffin cases, and then fill each case approximately two thirds with the muffin mixture. Bake the muffins for 25 minutes.

Apple Cinnamon Muffins

1/3 cup (75 mL) vegetable oil


1 egg


1 cup (250 mL) buttermilk


2 cups (500 mL) chopped peeled pears


Topping:

In bowl, whisk together flour, baking soda, ginger, salt and cinnamon.

3/4 cup applesauce


1 cup rolled oats


1 cup (6 ounces) semisweet chocolate chips





In a large mixing bowl, cream butter and sugar. Beat in egg. Combine dry ingredients; add alternately with applesauce to the creamed mixture. Stir in oats and chips. Fill greased or paper-lined muffin tins 3/4 full. Bake at 350掳 for 25 minutes.
