Mushroom ravioli
i dont make pasta, but my mom and my sister do and they are deliciousss! they use l;ike salmon and clams and olives and just anything. the pasta's they make are sooo good.
I am a single 23 year old male which is kinda sad but I love it cause I cook my own meals and I am a sweet cook and I get to eat it all instead of sharing with a wife! My all-time favorite pasta is 'Pasta With Peas, Cream, Parsley, And Mint' from epicurious.com. It is delicious if made right. A few tips I learned from experience is add a bit extra cream and sprinkle some graded cheese on top when finished. I have attached the website with the ingredients and directions in my sources. Hope you like it!
Pasta Bake

1 package of rotini

1 small container ricotta

1 container of your pre made pesto (or make your own)

1 jar of spaghetti sauce (i make my own)

2 cups of shredded mozzarella

Boil noodles according to package directions, drain and put in a large mixing bowl add ricotta and pesto and mix thoroughly. Pour into a oven safe casserole dish top with sauce and mozzarella. Place under a low broil until cheese melts and begin to brown.
Chicken and Broccoli Pesto

4 Chicken breasts, 1 inche cubes or slices

1 head broccoli, cut into small florets

1 lb Linguini or Long Egg Noodles ( I find the egg noodles hold more flavor and produce a dryer more concentrated taste, but its your preference)

1 Jar Pesto

3 cloves garlic, finely chopped.

2-3 Shallots, finely chopped.

Pine Nuts (roasted or plain)

olive oil (or oil of your preference)

Steam broccoli until just bright green. About 3-5 minutes. Set aside.

Heat pan to medium - medium high, add a little oil and lightly brown the garlic and shallots. Add chicken and cook until just about done. Set aside.

Boil salted water and cook pasta al dente. Drain it and add it to the chicken. (If you dont have a large enough skillet to do that, just put the pasta back in the boiler pot and add everything to that)

Heat over medium, toss to distribute garlic. Add broccoli and pine nuts. Add pesto sauce and toss. Let it cook up about 3-5 minutes so flavors can settle.

I serve this dinner with ciabatta bread, toasted in the oven with garlic and parmesan. Enjoy!

This takes about 20-30 minutes, start to finish :)

Or

Chipolte Chicken Pesto and Pasta

Ingredients:

2 boneless, skinless chicken breasts, cut into bite sized pieces

2 Tblsp of olive oil

1 large clove of garlic, peeled and chopped

4 shallots, chopped

1/2 C of chopped red and or yellow bell peppers

1 box of Farfalle pasta

1 container (about 1 1/4 C) of Chipotle Pesto*

salt and peppr to taste

Red and or yellow bell peppers to garnish

* Chipotle pesto can be bought pre-made in most grocery stores.

I don't have a great recipe for it at this time. Besides, it's

a LOT quicker this way, for those of us trying to put something

wonderful together after a day at work!

Directions:

1. Bring water to a boil to cook pasta

2. Add olive oil to a heated skillet and sautee shallots, garlic, and peppers until soft.

3. Add Chicken pieces, along with salt and pepper (I use red pepper flakes) to taste. Cook thoroughly.

4. In a small saucepan, heat the pesto (*chipotle pesto is very spicy, so keep that in mind as you determine the quantity you want to use!)

5. Cook pasta

6. After you drain the pasta, add the warmed pesto and chicken and toss together. I usually garnish this dish with slices of red and/or yellow bell peppers. It looks great, it's easy, and it's a big hit every time.
