This is my favorite meatloaf recipe. You can use any type of onion soup mix.





SOUPERIOR MEAT LOAF





1 envelope Lipton庐 Recipe Secrets庐 Onion Soup Mix


2 lbs. ground beef


3/4 cup plain dry bread crumbs*


2 eggs


3/4 cup water


1/3 cup ketchup


1. Preheat oven to 350掳. In large bowl, combine all ingredients.





2. In 13 x 9-inch baking or roasting pan, shape into loaf.





3. Bake uncovered 1 hour or until done. Let stand 10 minutes before serving.





*Substitution: Use 1-1/2 cups fresh bread crumbs or 5 slices fresh bread, cubed.





SLOW COOKER METHOD: In slow cooker, arrange meat loaf. Cook covered on LOW 6 to 8 hours or HIGH 4 hours. (HELPFUL HINT...Place meat loaf on a piece of cheesecloth, then on a rack to help hold meat loaf together while lifting in and out of slow cooker.)

I have a recipe that is a hit! I take 3# of ground beef, season your meat with garlic powder,onion powder, and pepper. Chop an onion up pretty small, 1/2 can of cream of mushroom soup mixed in and 1 cup bread crumbs. after it is all mixed up, shape put in a prepared pan spread the remaining mushroom soup on the top and bake covered for 65 min. or until done. at 350.





This makes a wonderful gravy in the bottom of the pan, that you can spoon over mashed potatoes.


this is a bit non traditional meat loaf, but if is awesome.

2 lbs turkey, 1 cup oat meal, 1 small can diced tomatoes, 1 egg, chopped onion, grated carrot, salt and pepper to taste. mix well, bake at 375 till done. Serve with mashed taters!!

What's the best fish recipes for a person who doesn't like seafood?

My husband and I don't like seafood, but for health reasons the doctors are stressing to incorporate it into his diet.


Whats the best way to prepare (without frying) fish. Or should I say which fish tastes the least like fish and how do I prepare it and still get all the omega-3 fatty acids or whatnot?What's the best fish recipes for a person who doesn't like seafood?
My husband loves seafood and I hate it. I will make him fish on occasion (tilapia or shrimp, though I know shrimp is not fish!), but I won't touch any of it.


Instead, I eat a lot of red meat and chicken, and I take a high quality cod liver fish oil from Carlson's. Their oils are mercury-free. So much of the fish available on the market comes from factory farming and is not good for you, or from seas that are high in mercury and other pollutants. People have been warned for years to not eat much canned tuna because of the mercury content.


Krill oil is also a very good source of Omega 3's. So why suffer eating foods you don't like?What's the best fish recipes for a person who doesn't like seafood?
I like boiled and fried shrimp -- fried clams -- fried bass and catfish if it's farm raised .... but not at all crazy about most fish such as tuna steaks, swordfish, tilapia, salmon. I have recently discovered that shark steaks are pretty good, though.





Shark Steaks


3 (8 ounce) shark steaks


1/4 cup soy sauce


1/4 cup Worcestershire sauce


2 tablespoons onion powder


2 tablespoons garlic powder


2 tablespoons chopped fresh thyme


2 tablespoons ground black pepper


2 tablespoons chili powder





Rinse the shark steaks and trim off any skin.





Mix together the soy sauce, Worcestershire sauce, onion powder, garlic powder, thyme, black pepper, and chili powder in a small bowl to form a paste. Spread a thin layer of the mixture on both sides of each shark steak. Place on a plate and cover. Allow to marinate in the refrigerator at least 30 minutes.





Preheat oven to 325 degrees F (165 degrees C).





Arrange the shark on a baking sheet. Bake the shark in the preheated oven until cooked completely through, about 40 minutes, turning the steaks over once, about half-way through the cooking time.





Can also be grilled for 15 minutes, turning once half-way through the cooking time.
Lots of people who don't much like fish (me, me) like salmon, which lends itself to many easy preparations and sauces. Gamefish--yellowfin tuna (also called ahi) and swordfish--taste the least fishy. IMO, ahi has a definite steak-like taste. Splash some worcestershire on swordfish and grill or broil. Don't forget shellfish as another healthy option. Shrimp and scallops can be quite tasty.





I heat just enough olive oil to coat the pan, dust ahi or large scallops with pan searing flour (which is just seasoned flour), and when the oil smokes, in it goes. The ahi I watch the edges, and when it's browned a quarter of the way up, I flip it. When the other side's cooked a quarter of the way up, and the center is rare, it's done--and I like it every bit as much as a good steak.





For any kind of fish fillet or steak (salmon, tuna, marlin, tilapia, halibut, tuna, catfish, perch, trout, swordfish, whitefish, sable, shark--but not shellfish), there are always three options. Bake at 350F in a pan with sides (water will leak out), broil 3-4 inches from heat, or grill over hot coals, each for ten minutes per inch of thickness. (Measured at the thickest part. Seriously, measure it, literally.)





Cooked fish flakes very easily, so if you grill, you may need to get a mesh or other metal basket or device that keeps it in one piece instead of letting bits cooked through to fall into the fire.





Purchased marinades are plentiful, or try mixing lemon juice, softened/melted margarine, and a little pepper and dotting it on the fish. Note: if your fish has skin or scales, put that side down when baking unless a recipe instructs otherwise. Scales/skin will really stick to a glass pan, so use a non-stick spray first or line it with foil.
i like salmon alot....i dont think it has a very fishy flavor, because i also dont like most types of fish. i usually broil the salmon in the oven, and i put alot of lemon juice, garlic and basil on it before putting it in the oven....and grilling it is also good





some other sauces you could put on it is soy sauce, teryakki sauce or some type of salad dressing like Italian dressing
I agree with what others have said - Salmon and Talapia are mild and can be prepared a variety of ways. I didn't used to like fish either and the more I have eaten the more I have acquired a taste for it. Also they do sell Omega-3, fish oil capsules in the vitamin section of a drug or grocery store.
I always ate trout when I wanted a bland fish. You can roast it in the oven with butter/oil (your preference) and lemon juice. Old bay Spice seasoning will add some flavor, too.
take fish body oil which has the omega three fatty acids. or just learn to eat fish like every one else.
take a fish oil pill and eat chicken!
Tilapia is very mild tasting. I dont like ';fishy'; fish also, but really like Tilapia. I've grilled it in the past with salt and lemon pepper, and it came out fine.





Tuna is good, especially if you already like tuna sandwiches.





Seafood doesn't necessarily have to be fish though, adding shrimp instead of chicken to a burrito sounds like a good idea to me ;-)

Filling


1 1/2 cups vanilla low-fat yogurt


1 container (8 oz) reduced-fat sour cream


1 box (4-serving size) vanilla instant pudding and pie filling mix


2 tablespoons orange marmalade


Topping


1 cup halved fresh strawberries


2 kiwifruit, peeled, thinly sliced


2 tablespoons orange marmalade





Heat oven to 450掳F. Make pie crust as directed on box for One-Crust Baked Shell,


Using 9-inch tart pan with removable bottom or 9-inch glass pie plate. Bake 9 to 11 minutes or until light golden brown. Cool completely, about 30 minutes. In medium


bowl, mix filling ingredients with wire whisk until well blended. Pour into cooled baked shell. Arrange strawberries and kiwifruit on filling. In small microwavable bowl, microwave marmalade uncovered on High 5 to 10 seconds or until melted. Brush over fruit. Refrigerate about 1 hour or until set before serving. Cover and refrigerate any remaining tart. Makes: 8 servings.





NO BAKE COOKIES





2 cups sugar


4 tablespoons cocoa


1 stick butter


1/2 cup milk


1 cup peanut butter


1 tablespoon vanilla


3 cups oatmeal


Waxed paper





In a heavy saucepan bring to a boil, the sugar, cocoa, butter and milk. Let boil for1 minute; then add peanut butter, vanilla and oatmeal. On a sheet of waxed paper, drop mixture by the teaspoonfuls, until cooled and hardened.What is the best recipes for lunch and desserts without oven?

Pita pockets are great to stuff with a variety of things

Red cabbage

Lowfat Mozzarella cheese


Pita bread





Use any combination of the above raw vegetables. Chop fine and mix with Mozzarella cheese. Place vegetable and cheese mixture inside pita pocket. Microwave 60 seconds until cheese melts and vegetables are warm. It's delicious!
Salads! Chicken salad, egg salad, tuna salad, salmon salad or a great tossed salad with lots of veggies. Slice some tomatoes, cucumber, serve rolls and butter and you are cool.


Desserts can be fruit salad, melon, ice cream or good store bought cookies or cake.

    okay, you wanted my family favs? these are the recipes i give out the most often on yahoo answers, personal notes and all. (i've got more, but my answer would be pages long!)......





    not a big fish fan, but i LOVE this recipe i got from my aunt





    Parmesan Fish Fillets:


    2/3 cup parmesan cheese


    1/4 cup flour


    1/2 tsp. salt


    1/4 tsp. pepper


    1 tsp. paprika (optional)


    1/4 cup milk


    1 egg; beaten


    1/4 cup butter; melted


    1/3 cup sliced almonds (i toast them slightly)


    2 pounds tilapia; 1 1/4 inch thick





    mix cheese, flour, salt, pepper, paprika togehter. beat eggs and milk together. coat fish in egg then in flour/cheese. lay in a glass baking dish. pour butter on top, then top with almonds.





    bake at 350 degrees for 20 minutes; or until fish is firm and done.

    this is my mother-in-laws recipe. they are SUPER yummy, really easy, and fairly cheap to make. for a little more flavor i either boil them in chicken stock, or cook them in the oven with a little salt, pepper, and garlic powder. you can also shred a store bought rotisserie chicken. i usually add more cheese than called for, and sometimes i mix regular jack with pepper jack cheese. i use one can of regular green chili enchlada sauce, and one jar of really good green salsa, pica de gaillo, orsalsa verde. it definately add alot of flavor that way





    Creamy Chicken Enchiladas :


    3-4 chicken breast, boiled, then cool and shred


    1 small can green chilies


    1 medium onion, chopped


    1 can cream of chicken soup


    1 can cream of mushroom soup


    8 oz. shredded monterey jack cheese


    2 cans green chili enchilada sauce


    2 tbs. butter


    tortillas


    sour cream


    salsa


    olives





    in sauce pan saute the onion in butter, add soups, chilies and 1 can of enchilada sauce, bring to boil, add shredded chicken, lower heat ans cook for 5 minutes.


    put tortillas in microwave to soften for about 45 seconds





    place about 2-3 tbl. of chicken mixture in tortilla and roll, place in baking dish. cover with other can of sauce and cheese. bake @ 350 degrees for 30-40 min. garnish with salsa, olives and sour cream

    my husband is the biggest meat eater ever, but CONSTANTLY requests this meatless dish. it seems like alot of vegetables (about 2 cookie sheets) and sometimes i even add a little more than called for, but they really shrink down. make sure to use a good quality parmesan, as it is a key flavor component.





    Pasta Primavera:


    3 carrots, peeled and cut into thin strips


    2 medium zucchini or 1 large zucchini, cut into thin strips


    2 yellow squash, cut into thin strips


    1 onion, thinly sliced


    1 yellow bell pepper, cut into thin strips


    1 red bell pepper, cut into thin strips


    1/4 cup olive oil


    Kosher salt and freshly ground black pepper


    1 tablespoon dried Italian herbs or herbes de Provence


    1 pound farfalle (bowtie pasta)


    15 cherry tomatoes, halved


    1/2 cup grated Parmesan





    Preheat the oven to 450 degrees F.


    On a large heavy baking sheet, toss all of the vegetables with the oil, salt, pepper, and dried herbs to coat. Transfer half of the vegetable mixture to another heavy large baking sheet and arrange evenly over the baking sheets. Bake until the carrots are tender and the vegetables begin to brown, stirring after the first 10 minutes, about 20 minutes total.





    Meanwhile, cook the pasta in a large pot of boiling salted water until al dente, tender but still firm to the bite, about 8 minutes. Drain, reserving 1 cup of the cooking liquid.





    Toss the pasta with the vegetable mixtures in a large bowl to combine. Toss with the cherry tomatoes and enough reserved cooking liquid to moisten. Season the pasta with salt and pepper, to taste. Sprinkle with the Parmesan and serve immediately.

    you can use any nuts you like, really. i used mixed nuts the first time, but now i'm going to just use pecans and cashews. you will probably need to go to the bulk section of your store. make sure the nuts are roasted, but not salted.





    Rosemary Roasted Mixed Nuts:


    1 1/4 pounds mixed nuts


    2 tablespoons coarsely chopped fresh rosemary leaves


    1/2 teaspoon cayenne


    2 teaspoons dark brown sugar


    2 teaspoons kosher salt


    1 tablespoon melted butter





    Preheat the oven to 375 degrees F.


    Place the nuts on an ungreased baking sheet and bake for about 10 minutes until they are warmed through. Meanwhile, combine the rosemary, pepper, sugar, salt and butter in a large bowl. Toss the warm nuts with the rosemary mixture until the nuts are completely coated.





    the rosemary will smell really strong, and you might think you've used to much, but don't worry it's just the right amount. make sure to use fresh rosemary, dried will not work for the proper effect.

    Cranberry Squares:


    1-1/2 cups quick-cooking oats


    1-1/2 cups flour


    1 cup firmly packed light brown sugar


    1 tsp. Baking Powder


    3/4 cup (1-1/2 sticks) cold butter, softened


    1 cup Brandied Cranberry Sauce





    Preheat oven to 350掳F.


    Mix oats, flour, sugar and baking powder in large bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Press 2/3 of the oat mixture firmly onto bottom of 9-inch square baking dish; top with Brandied

    1 can (18.5 oz) Progresso庐 Carb Monitor鈩?


    chicken cheese enchilada-style soup


    1 can (10 oz) Old El Paso庐 hot or mild enchilada sauce


    2 cups shredded cooked chicken


    2 cups shredded Monterey Jack cheese (8 oz)


    10 corn tortillas (6 inches)


    2 medium green onions, thinly sliced





    Heat oven to 350掳F. In medium bowl, stir together soup and enchilada sauce. Spread 1 cup soup mixture in ungreased 11x7-inch baking dish.





    In large bowl, mix 1 cup soup mixture with chicken and 1 cup of the cheese; reserve remaining soup mixture. On microwavable plate, stack tortillas and cover with paper towel; heat on High 1 minute to soften. Place 1/4 cup chicken mixture along middle of each tortilla. Roll up and place seam sides down in baking dish with sauce.





    Pour remaining soup mixture over enchiladas. Sprinkle with remaining 1 cup cheese. Sprinkle green onions on top. Bake about 30 minutes or until cheese is melted and sauce is bubbly around edges.
    Cheese and Garlic Biscuits





    2 陆 cups Bisquick baking mix


    戮 cup cold milk


    4 tablespoons cold butter (1/2 stick)


    录 teaspoon garlic powder


    1 陆 cups grated cheddar cheese





    Bush on Top:


    2 tablespoons butter, melted


    录 teaspoon dried parsley flakes


    陆 teaspoon garlic powder


    pinch salt





    Directions:


    1. Preheat your oven to 400 degrees.





    2. Combine Bisquick with cold butter in a medium bowl using a pastry cutter or a large fork. You don't want to mix too thoroughly. There should be small chunks of butter in there that are about the size of peas. Add cheddar cheese, milk, and 录 teaspoon garlic. Mix by hand until combined, but don't over mix.





    3. Drop approximately 录-cup portions of the dough onto an ungreased cookie sheet using an ice cream scoop.





    4. Bake for 15 to 17 minutes or until the tops of the biscuits begin to turn light brown.





    5. When you take the biscuits out of the oven, melt 2 tablespoons butter is a small bowl in your microwave. Stir in 陆 teaspoon garlic powder and the dried parsley flakes. Use a brush to spread this garlic butter over the tops of all the biscuits. Use up all of the butter. Makes one dozen biscuits.

    SJ-SC-CA Incredible Chicken Salad





    3 cups chicken breast (cooked and cubed)


    1 cup pineapple (diced)


    1/2 cup celery (diced)


    1/2 cup mayonnaise


    1/4 cup raisins


    1/4 cup walnuts


    1/8 cup dried cranberries


    2 Tablespoons sweet onion (minced)


    2 Tablespoons apple juice





    Combine all ingredients in a bowl until well combined and chill. Serve with a lettuce garnish.





    ***You can use the chicken salad as a sandwich filling.***
    Bacon Wrapped Chicken











    4 Boneless Skinless Chicken Breasts


    4 pieces of bacon


    2 eggs beaten


    2 cups of Italian style bead crumbs (I never measure this part out you may need more than 2 c.)


    9x13 cake pan or baking sheet will do too


    1 gallon sized baggie


    Salt and Pepper to taste





    Pre heat oven to 350*





    In the gallon sized baggie, add your seasonings and bread crumbs. Shake to mix.


    Dip your chicken into the beaten eggs


    Place one piece of chicken at a time into the baggie and shake until evenly coated.


    Wrap a piece of bacon around the coated chicken and place on baking sheet or in the cake pan.


    Repeat until all your chicken is ready for the oven.


    Place in the pre heated oven and bake until juices run clear-apx 1 hr.
    Sorry, not a lady, but I have a meal set that will keep you changing things up for a little while. Tyson makes a sleeve of frozen chicken patties (you can get yours at walmart, or even the walmart brand). So lets use that as our base...





    --Add swiss cheese and ham-Chicken Cordon Blue


    --Add a table spoon of pizza sauce and mozzerella-chicken marinara


    --Add ranch and bacon-YUM


    --Add bbq sauce and some american cheese


    --Add buffalo sauce on one side, and blue cheese or ranch on the other


    --Add Alfredo sauce





    There are a lot of ideas, there are some to wet your whistle the entire sleeve of chicken, and you can come up with others. Hope that helps.
    Southern New Mexico Stacked Enchiladas





    2 or 3 corn tortillas per person





    red enchilada sauce from frozen red chile puree Hatch brand





    2 pounds grated cojack cheese





    1 medium onion minced





    2 pounds extra lean hamburger browned





    lettuce and tomato shredded and diced finely and mixed





    2 eggs fried over medium per enchilada





    heat skillet with vegetable oil depth about 1 inch. Dip tortilla in and flip over and remove to drain.





    dip fried tortillas in red enchilada sauce and place in middle of micro safe plate.


    On this put a hand full of meat, one of onions and 2 of cheese top with another tortilla. and more of the meat, onions and cheese. If three tortillas are desired do another.





    Microwave on high for 1 minute Place fried eggs on top, pour about half cup enchilada sauce over this and put salad around the edges.





    Not for sissies!!!
    Black Forest Cake;





    Make two 9'; round chocolate cakes according to package directions. Cool for 15 minutes.





    Boil 1 cup of water, add 1 small box of cherry Jello. Stir well, then add 1/4 cup cold water.





    Poke holes in cake w/ a fork, then pour Jello into holes. Refrigerate cakes for 4 hours.





    Mix 1 tub of French Vanilla Cool Whip with 3/4 cup of powdered sugar and 3/4 cup sour cream. Frost the first layer of cake, sprinkle with chopped maraschino cherries. Place the other cake layer on top and frost. Garnish with more cherries and shaved chocolate.





    Best cake ever, everyone loves it and it's super easy.
    Beef Burgundy


    2 lbs. cubed beef


    1/2 pkg. onion soup mix


    1 can cream of mushroom soup


    1/2 cup burgundy or red wine.


    Pour wine over beef in single layers in baking pan. Sprinkle with onion soup mix then spread mushroom soup over all. Cover tightly with foil and bake at 350 1 1/2-2 hours. Serve over noodles. Best of Luck.

    Grandma's Waffle Iron Cookies are a holiday favorite in my family. One note, a Belgian waffle irons (the kind that makes the really big holes in waffles) don't work for this recipe, you need a standard waffle iron.





    Ingredients for cookies


    4 squares semi-sweet bakers chocolate


    2 sticks plus 2 tbsp margarine


    1 1/2 c sugar


    4 eggs


    2 c flour


    1/2 tsp salt





    Ingredients for frosting


    1/4 c margarine


    1/3 c milk


    1 tsp vanilla


    2 squares semi-sweet bakers chocolate


    2 1/2 c powdered sugar


    M%26amp;Ms for decoration - we usually put two green and one red on each cookie to kind of look like holly.





    Directions for cookies


    Melt chocolate and margarine together in a small pan, stirring continuously. In a bowl combine sugar and eggs and mix bowl. Add chocolate mixture and stir well. Add flour and salt and stir well. Cook in waffle iron at medium low/light waffle setting. If the waffle iron does not have settings you will have to keep unplugging iron to control heat. Cook for 1 1/2 to 2 minutes, the cookies should easily lift out with fork. Place on cooling rack or on paper towels to cool.





    Directions for frosting


    Combine margarine, milk, and chocolate in a pan and melt stirring continuously. Remove from heat, add powdered sugar and vanilla and mix well. Frost cookies right away before frosting gets to thick, topping with M%26amp;Ms as you go.Best holiday recipes you have ever eaten in your entire life?

    I love omelettes. We eat them for breakfast all the time. I've even cooked omlettes for dinner! Our favorites are Denver Omlette. The ham, onion and green pepper. Usually we end up with just ham and onion. And I also like bacon and cheese, or broccoli and cheese. Mmmm good! We even throw onions into the potatoes when we cook them up. That's my favorite.
    Take a small non stick pan and cook the bacon--chop it up first into bite size piece and cook over medium heat--not too hot --don't want to burn it. Cook to desired level of crispness then set aside on a paper towel and leave the grease in the pan. Beat two eggs in a small bowl, add salt and pepper to taste then the secret ingredient--fresh chopped basil. Pour into the heated pan (with a little bit of leftover bacon grease). Cook till egg is slightly set then add some of the following items on to one side of the omelet: cheddar cheese, blue berries, peaches, tomatoes, and then add the crispy bacon. When the egg is set through, slide it out half way on to a plate and flip the other half over to enclose fillings...yummers! Oh then add hash browns and you're set! Gotta go, I'm hungry!

    Hey Robert, besides yahoo answers website, I would look at foodnetwork.com look at fixing dinner the hostess there plans recipe's and ingredients for a week., Rachael Ray, for quick and simple, You can't go past these two, Bobby Flay and Mario Batali.





    Let me say this to you, don't make the same mistake as I did, check what herbs and spices you have, Check what pastas, Rice and flours you have etc, before you go out and empty a grocery store. You will find for example you can interchange ingredients.





    You will find over and over three or four basics, Thyme, Parsley, Garlic and Rosemary. Your main stocks are chicken and beef, if you have the time and patience, make you own stock big saving there. and you won't believe yourself, you make your basic chicken soup, and your three vegetables, onion, carrot and celery, you use left over chicken or turkey, even the bones, strain, and you have gone from soup to stock basically.

    INGREDIENTS:





    * 2 teaspoons cayenne pepper


    * 2 teaspoons lemon pepper


    * 2 teaspoons garlic powder


    * 2 teaspoons salt


    * 2 teaspoons pepper


    * 1 pound catfish fillets


    * 2 tablespoons butter


    * 1 cup Italian-style salad dressing





    DIRECTIONS:





    1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.


    2. In a shallow, medium bowl, mix cayenne pepper, lemon pepper, garlic powder, salt and pepper.


    3. Brush both sides of catfish fillets with butter. Rub fillets with the cayenne pepper mixture on both sides.


    4. Heat a large heavy skillet over medium-high heat until really hot. Add fillets, and fry approximately 2 minutes on each side, until slightly blackened.


    5. Arrange blackened fillets in a single layer in the prepared baking dish, and coat with Italian-style salad dressing. Bake 30 to 35 minutes in the preheated oven, until fish is easily flaked with a fork.











    Blackened Catfish








    INGREDIENTS:





    * 6 U.S. Farm-Raised Catfish fillets


    * 1/2 teaspoon garlic powder


    * 1 teaspoon cayenne pepper


    * 1 teaspoon black pepper


    * 1 teaspoon salt


    * 1 tablespoon crushed dried thyme leaves


    * 1/2 teaspoon paprika


    * 1/2 cup butter


    * 1/4 cup dry white wine


    * juice of one lemon





    DIRECTIONS:





    1. Wash the catfish fillets and pat dry. Set aside. Combine all the dry ingredients in a small bowl and set aside.


    2. Melt the butter in a pan. Add the lemon juice and mix well. Dip the fillets into the butter mixture. Sprinkle the fillets liberally with the spice mixture on both sides, and set aside.


    3. When ready to cook, heat a black iron skillet on the stove until very hot. Carefully place the fillets in the skillet and cook for about 2 minutes on each side. Keep moving with a spatula to prevent sticking. When the fillets are cooked, remove them from the skillet. Remove the skillet from the burner. Pour the butter mixture into the skillet, quickly adding the wine, and stir. Pour the pan juices over the fillets and serve immediately.











    Blackened Catfish





    I have always been a fan of catfish. We lived in Baton Rouge, LA several years ago and I became a fan of blackened catfish. This is a wonderful recipe that is quick to fix.


    1 lb catfish fillets


    2 tablespoons olive oil


    1 tablespoon garlic powder


    1 tablespoon onion powder


    1/2 teaspoon salt


    1 teaspoon white pepper


    1 teaspoon black pepper


    1 teaspoon cayenne pepper


    2 teaspoons thyme


    1 teaspoon paprika


    1 teaspoon oregano











    1. Place the fish fillets in a large bowl and drizzle olive oil over them, let stand for 30 minutes.


    2. Combine spices in a 9-inch pie plate.


    3. Heat a cast iron skillet upside down over high heat for 5 to 10 minutes or until very hot.


    4. Turn on vent fan during cooking to eliminate smoke.


    5. Using a hot pad, turn pan right side up.


    6. Remove fish fillets from oil and drain.


    7. Dip each fillet into seasonings and coat each side evenly.

    I'm Asian and my knowledge in pasta cooking is limited only to macaroni, spaghetti, and penne. A friend gave me a pack of rigatoni and I honestly don't know what to cook with it. I'm avoiding complicated and too elaborate dishes since I'm no cooking expert. Simple but yummy recipes will do. Thanks!Can you please share with me your best rigatoni recipes?
    Make a 'basic light cream sauce' ... butter or olive oil, garlic, whipping cream, and cheese (start with 'refrigerated' parmesan, then try other cheeses each time you make this) ...toss in some meat (any kind you can 'cook ahead' and cut into 'bite sized' pieces) and add 1 to 3 of the following ... spinach, mushrooms, tomatoes, zucchini or summer sqaush, then add that to the rigatoni ... you can 'stir' in the pot, or just 'spread it over' each serving on the plates. You can actually do this with ANY pasta, but it's especially good with Rigatoni, and I'll leave it up to you to 'move on' from there. Simple, yummy, and A TOTAL SURPRISE for the people who 'expect' everything you cook to be 'Asian' ...Can you please share with me your best rigatoni recipes?

    take two very ripe large tomatoes and put them in the blender with two cloves of garlic.





    Add it to a pan with a little butter and salt.





    Cook it, and stir a lot until it gets very thick .





    Add a little basil at th ever yend.

    Emeril's Rigatoni with Roasted GAAHLIC SAUCE





    Ingredients needed:





    * 1/4 cup extra-virgin olive oil


    * 1 1/2 cups chopped yellow onions


    * 1 tablespoon minced garlic


    * 1/4 cup tomato paste


    * 6 tablespoons Roasted Garlic Puree, mashed into a paste


    * 2 (28-ounce) cans whole peeled tomatoes, broken up, and their juices, seeds discarded


    * 2 (15-ounce) cans tomato sauce


    * 1 tablespoon hot pepper sauce


    * 1 teaspoon granulated sugar


    * 1 pound rigatoni


    * 2 tablespoons fresh lemon juice





    * 3/4 cup grated Pecorino (I use Parmesan cheese)


    * Chopped parsley, for garnish








    In a large heavy pot, heat the oil over medium-high heat. Add the onions and cook, stirring, until soft, 4 to 5 minutes. Add the garlic and red pepper flakes. Stir until fragrant, about 30 seconds. Add the tomato paste and cook, stirring, for 1 minute. Add the garlic puree, and cook, stirring, for 30 seconds. Add the tomatoes and their juices, tomato sauce, hot sauce and sugar. Bring to a boil, stirring occasionally. Reduce the heat to medium-low and simmer uncovered, stirring occasionally, until thick and fragrant, 30 minutes. Remove from the heat and cover.





    Bring a large pot of salted water to a boil. Add the pasta and cook until just barely al dente, 8 to 10 minutes. Drain and transfer to the pot with the sauce. Add the lemon juice and bring to a simmer and cook until the pasta is well coated and warmed through, about 3 minutes.





    Transfer to your serving bowl and toss with remaining cheese.

    RIGATONI WITH TOMATO, SAUSAGE, AND MUSHROOM SAUCE





    6 tbsp. olive oil


    2 medium yellow onions, sliced


    1 yellow bell pepper, diced


    1 lb. sweet Italian sausage, cut into 1” pieces


    2 garlic cloves, chopped


    10 oz. white mushrooms, sliced


    ½ tsp. dried oregano


    Salt %26amp; pepper


    1-28 oz. can of Italian crushed tomatoes, with juices


    1 box rigatoni


    2 tbs. butter


    ½ c. fresh basil, chopped, OR 1/2 tsp. dried basil


    ½ c. freshly grated Parmigiano-Romano cheese OR store- bought parmesan/romano cheese





    In a large skillet or saute pan, heat 3 tbsp. of the olive oil over medium heat. Add onions, bell pepper and sausage. Cook, stirring frequently, until sausage is no longer pink. (About 15 minutes.) Add the garlic and cook, stirring, for 2 minutes. In a separate pan, heat the remaining 3 tbsp. olive over medium-high heat. Add the mushrooms. Cook, stirring until browned. (About 8 minutes.) Add oregano, salt and Pepper to taste. Add the tomatoes. Stir and bring to a boil. Meanwhile, cook the Rigatoni according to the directions on the box, adding 1 heaping tbsp. salt. Drain and toss with the butter. Stir in the basil. Place the Rigatoni on a serving platter and pour the sauce over it. Sprinkle the cheese on top and serve immediately. CarolSandyToes1
    BAKED STUFFED RIGATONI





    5 slices bacon, diced


    3/4 c. onion, chopped


    3/4 c. celery, chopped


    3/4 c. bell pepper, chopped (optional)


    3/4 c. carrots, finely grated


    2 (28 oz.) cans tomatoes


    2 (10 oz.) cans condensed beef broth


    3/4 tsp. salt


    4 tbsp. sugar


    5 cloves garlic, crushed


    1/2 tsp. thyme leaves


    1 bay leaf


    2 c. water





    Cook bacon in large Dutch oven pot until crisp. Add onion, celery, carrots, and bell pepper; cook until tender. Stir in tomatoes that were blended in a blender. Add beef broth, salt, sugar, garlic, parsley, thyme, and bay leaf and water. Simmer, uncovered, for 3 hours, stirring occasionally. If sauce becomes too thick, add a little water during cooking.





    Cook Rigatoni: 8 oz. rigatoni (about 60) 1 tbsp. salt





    Stir rigatoni into boiling, salted water, stirring occasionally to make sure they do not stick together or to the bottom of pot. Cook until tender; pour into colander; drain and rinse in cool water; drain. Spread on cookie sheet to drain all water from inside rigatoni. Meanwhile, cook the stuffing.





    MEAT STUFFING:





    2 tbsp. oil


    3/4 c. onion, chopped


    1 clove garlic, minced


    2 lbs. ground beef


    2 eggs, beaten


    1/2 c. Italian bread crumbs


    1 tbsp. parsley


    Salt and pepper to taste





    In skillet, add oil, onion, and garlic; cook over medium heat until golden. Add beef and cook, stirring constantly, just until lightly brown. Remove from heat; let stand for a few seconds. Stir in the eggs, then the bread crumbs and parsley. Stuff rigatoni with meat mixture; arrange in shallow 3 quart greased casserole. Pour tomato sauce over stuffed rigatoni; sprinkle with grated Mozzarella cheese. Bake in 350 degree oven for 30 minutes. You may omit Mozzarella and use grated Parmesan, if you wish.

    1 pkg of Johnsonville Sweet Basil Italian Sausage


    when cooked through and cooled, slice links


    Cook Rigatoni and drain


    1 Jar of Ragu Chunky Garden style pasta sauce - your favorite flavor





    Mix together the pasta, sauce and sausage and heat through.


    Serve with garlic toast, salad, and Parmesan cheese.
    Rigatoni - if you read the package instructions, cooks much the same as most pasta, perhaps a little longer. My favorite recipe; and the easiest would be to pre-cook the pasta, drain well and toss with an either home made or good jar sauce, lots of grated parmesan cheese, some shredded mozzerella and place in an oiled or buttered caserole dish. Top with more sauce and cheeses, and bake @ 350, uncovered for a half hour or so. Serve with a side salad and it's a meal...Ideal Vegetarian dish too or add pieces of sausage or meatballs. Caution, a little rigatoni, cooked makes a lot. I use only about half the 1 lb. box for 4 to 6 people.

    8 oz. shredded Mozzarella


    3 1/2 c. spaghetti sauce


    1 (15 oz.) container ricotta

    Mix first 4 ingredients and 1 1/2 cups of spaghetti sauce in a bowl. In a 2 1/2 quart baking dish spread 1/2 cup spaghetti sauce. Add ziti mixture and top with remaining 1 1/2 cups of spaghetti sauce. Sprinkle with 1/2 cup of Parmesan cheese. Bake at 375 degrees for 30 minutes or until top slightly browned.

    1 bag (1 lb) frozen meatballs


    1 jar chili sauce


    1 jar grape jelly (small size)





    Mix chili sauce and grape jelly together, pour over frozen meatballs in crockpot. Cook for 8 hours on low. Fabulous!Gimme the wierdest but best recipes you have?

    Cook the mac and cheese as it says, add in the cream of mushroom soup, add in additional mushrooms and black olives and tuna fish (drained) packed in water. Reheat up, and serve.

    WORLD'S GREATEST REDNECK/POSSUM RECIPE's





    Wild Possum Kabob





    Ingredients:


    1 Still breathing, corn-fed Possum


    3 Ripe but firm tomatoes


    1 Large white or yellow onion


    1/2 pound large mushrooms


    2 large green peppers


    1 package meat marinade


    1/2 cup soy sauce


    12 skewers (sticks are okay in Arkansas)





    Preparation:


    The possum must be alive so that you can scare it, giving you the ';wild'; taste from all the adrenaline it produces. It is best to hit it over the head with a large object in a humane manner. Boil the possum for 3 minutes to loosen the fur then skin and gut it.


    De-limb (chop the little knubby legs off) the possum and cut the meat into 1/2 inch square chunks. Marinate overnight in a mixture of meat marinade and soy sauce. Kentucky residents who have no fridge can use an ice chest and may use radiator coolant instead of soy sauce.


    Thread the meat and veggies onto your skewer/stick in alternating sequences to distribute the delicious flavor evenly. Cook over a barbecue, pit, 50 gallon drum or any other fire till you get the desired result. For added flavor, you can cook it over burning tires.











    Possum and Taters


    Ingredients:


    1 young, fat possum


    8 sweet potatoes


    2 tablespoons butter


    1 tablespoon sugar


    salt








    Directions: First, catch a possum. This in itself is excellent entertainment on a moonlight night. Skin the possum and remove the head and feet. Be sure to wash it thoroughly. Freeze overnight either outside or in a refrigerator.


    When ready to cook, peel the potatoes and boil them tender in lightly salted water along with the butter and sugar. At the same time, stew the possum tender in a tightly covered pan with a little water. Arrange the taters around the possum, strip with bacon, sprinkle with thyme or marjoram, or pepper, and brown in the oven. Baste often with the drippings.











    Possum Pot Pie





    Ingredients:


    1 cup glazed huckleberries


    3 shots gin or moonshine


    1 possum


    ---if roadkill: make jambalaya


    ---if caught: proceed with recipe


    1 pie crust


    sliced carrots %26amp; cabbage to taste





    Directions:


    Cover a pan (or any implement you can put in a fire) with the bottom of your pie crust, and place the possum in it. Add the huckleberries and carrots, and shred the cabbage over it. Close up the pie and bake until the neighbors' dogs come sniffing around to see what the wonderful smell is, or until the fire department arrives (whichever comes first). Remove pie from fire/oven, slice, and enjoy.











    Possum Creole


    Ingredients:


    1 slightly injured possum


    1 cup mayonnaise


    8 cups pig fat


    2 cups buttermilk


    2 fresh green peppers








    Directions: Slice green peppers and mix ingredients in a large bowl(exclude possum). Cut possum into chunks or thin strips. Mix possum chunks into bowl. Transfer contents of bowl into a casserole dich and bake under 350 degrees for two hours. Remove from oven, let sit for half an hour, and serve. ENJOY!!

    2. Add garlic, salt, pepper, lemon juice and olive oil.


    3. Turn chicken several times to coat with marinade.


    4. Cover and marinate 1-2 hours in the refrigerator.


    5. Prepare a hot fire in a barbecue grill.


    6. Oil the grill.


    7. Remove breasts from the marinade, shaking off excess and place on hot grill.


    8. Cook until lightly browned, about 6 minutes.


    9. Turn and brush with marinade.


    10. Grill second side 4-6 minutes or until white throughout but still juicy.

    Grilled Mushroom Packets





    Ingredients


    1 pound [about 5 cups] fresh white mushrooms, sliced


    2 [about 3-1/2 cups] medium zucchini, sliced


    1 [about 1/2 cup] medium onion, thinly sliced


    1 [about 1 cup] red bell pepper, diced


    1/2 cup couscous [uncooked]


    1/2 cup homemade or bottled barbecue sauce


    1/2 teaspoon salt, optional





    Method


    Preheat outdoor grill or oven to 425 degrees. Place mushrooms in a medium bowl. Add zucchini, onion, red pepper, couscous and barbecue sauce; toss until well coated; set aside. On a work surface place 4 sheets [each about 20 inches long] of heavy duty or doubled aluminum foil. In the center of each pieces place mushroom mixture, dividing evenly. Bring long sides of oil together over mixture, allowing space for heat circulation and expansion; fold to seal. Fold up short ends; crimp to seal. Place on prepared outdoor grill, about 5 inches from heat source or in oven. Cook until vegetables are tender and couscous is cooked [on grill for about 15 minutes, turning once, or in the oven for about 20 minutes]. Remove; let stand for 5 minutes. Carefully unfold foil and serve.

    i love to marinate steak tri-tip and teriaki sauce for about 24hrs and then grill and put on a salador just eat with plain. also it you like asparagus this recipe is really good take your asparagus and put it in a large shallow bowl, drizzle olive oil on top and lemon pepper and then grill it. it's the perfect vegtable to go with any summer dinner.

    I have been an enthusiastic juicer for years; my high intake of juices did not prevent me from getting cancer, nor did it cure me. Juice always made me feel better, except when I forced myself to drink it during chemo, when it made me very nauseous.

    I don't recommend juicing for a cancer patient. If she is on chemo, her immune system will probably be compromised. You should minimize raw foods during chemo because of that. A few bacteria on berries that would never even bother you, can put a chemo patient into a deadly infection state.





    In addition, as juicing involves fruits and veggies with high antioxidant levels, this can interfere with chemotherapeutic agents. There's nothing wrong with a few fruits and veggies per day, but any supplements or highly concentrated antioxidant potions like juiced fruits or smoothies, is not such a good idea.





    She can eat healthy again when she's through treatments.
    Save your money and eat and drink as normal as possible. My brother in law did the juice thing and it didn't work and the cancer still spread to other parts of his body.

    Carrot juice first and foremost, it's full of anti-oxidants. Then any fruit or vegetable juice, they are all good for you. You might also want to make sure they get regular portions of beetroot which is good for cleaning the blood.

    If you are not on chemo, juice is good. There are many articles written on juice and health. My favorite is the anti-cancer sangria, 2 oz red wine, 2 oz pure pomegranate juice, 2 oz of bottled berry juice of any type. Once per day.





    Next is a juice to keep lungs healthy, promote good immune, and keep your acids down. A highly acidic system feeds deadly diseases such as cancer. A balanced alkali system supports immune and helps prevent or fight deadly diseases. Carrot + Celery + 1 tbs of Green magma barley powder. Drink about a cup of this per day, but not at the same time as the sangria. Lung health needs to be supported with meds: annual flu shots, and pneumonia shots + the follow-up pneumonia booster shots. Too many cancer patients have died from pneumonia, and this unmanaged side effect needs to be managed aggressively.





    There is a lot written about the lack of Vitamin D and how it promotes cancer when levels of D are below normal. Anything you can do to boost that will help. This is not juice, but can be boosted with a little sun every day and supplements containing D or D3.





    I have advanced prostate cancer, and even though the cancer is progressing slowly, my general blood tests are perfect. I believe keeping strong will help me in the long run and prepare me for the time that I need to start more serious meds such as Chemo.

    i make a spaghetti meat sauce using textured vegetable protein , just soak it in massel beaf flavoured vegetable stock (the best vegan stock ever) and then drain completely. You will have a mince meat looking substance that you pan fry in olive oil, add garlic, fresh herbs, tomatoe paste, tomatoes (crushed) red wine, and simmer.     1 1/2 cups marinara sauce (vegetarian)


    1 teaspoon dried basil


    1 teaspoon dried oregano


    2 cups shredded mozzarella cheese


    15 ounces ricotta cheese


    1 egg, slightly beaten


    1/4 cup parmesan cheese


    1 teaspoon nutmeg








    Cook pasta according to package directions; drain.


    Rinse in cool water.


    Take Sauce and HALF of the basil and oregano.


    Cook 3 minutes.


    Makes 6-8 servings


    Spread 1/2 cup of sauce mixture into 13x9 baking dish.


    In bowl, stir together 1 CUP of the mozzarella, ricotta, egg, Parmesan, nutmeg and remaining basil and oregano.


    Fill pasta tubes with ricotta mixture; place in dish.


    Pour remaining sauce over pasta.

    RECIPE INGREDIENTS








    4 tablespoons vegetable oil





    1 medium onion, thinly sliced





    1 teaspoon minced garlic





    1 cup drained canned shredded beets





    1/2 cup grated yellow squash

    1/2 cup grated turnip





    1 tablespoon chopped fresh dill

    RECIPE METHOD








    In a large saute pan over medium-high heat, warm 2 tablespoons of the vegetable oil until hot. Add the onion and garlic and saute for about 5 minutes, or until the onion is translucent.








    Stir in the vegetables and herbs. Cook for 5 minutes.








    Add the rolled oats, stirring thoroughly. Check for seasoning, adding salt and pepper, to taste.








    Transfer the mixture to a large bowl, add the mashed potatoes, and mix together thoroughly. Form the mixture into 8 patties.








    In a large skillet over medium-high heat, heat the remaining 2 tablespoons of oil until it is hot. Fry the patties for about 3 minutes on each side, or until the burgers develop a crust.
    This is a super easy recipe, and it's really quick.





    Ground ';Beef'; Quesadillas


    You'll need:


    4 Flour or corn Tortillas, whichever you prefer


    A few slices of cheddar cheese


    1 Package of Yves Veggie Ground ';Beef'; or other ground beef substitute.


    2 sliced Pepperoncini peppers (Optional)





    Heat up a tortilla on a skillet on medium heat. Make sure the pan is hot before you put the tortilla on.





    Flip the tortilla once it is light brown, and add the cheese and ground ';beef'; then fold in half.





    Cook until cheese melts and tortilla is light brown.





    Repeat until you have four Quesadillas, then open them and put in the Pepperoncini, if desired.





    Cut in half and serve.

    Pork Chops





    4 boneless pork chops 1/2-3/4” thick


    ¾ C Parmesan cheese, finely grated


    1C plain or Italian bread crumbs


    2 eggs – lightly beaten


    4 T oil


    1T butter





    Wash pork chops, pat dry


    Salt and liberally pepper the pork chops


    Dip in Parmesan cheese, coat well, shake off any excess


    Dip in eggs both sides, get off excess


    Dip in bread crumbs





    Heat oil and butter in pan over Medium to Medium HI heat. Put pork chops in skillet; cook 6-7 minutes on each side until crisp. Don’t keep flipping them. Cook one side then the other.





    Remove and serve

    1 – 8 ounce package cream cheese – softened


    1 jar cheddar cheese spread – softened


    2 teaspoons red wine vinegar


    ½ teaspoon garlic salt


    1 cup finely chopped pecans





    Mix 1st 4 ingredients thoroughly, roll in chopped pecans. Wrap in waxed paper and chill until serving.








    This salad is always requested at cookouts.





    Thai Salad





    2 packages Ramen noodles – crushed – do not use seasoning packet


    ½ cup sunflower seeds


    ½ cup slivered almonds


    ½ cup (I stick) butter/margarine


    Sauté all above until golden, set aside to cool





    Chop 1 head Napa cabbage


    Chop 1 bunch green onions





    Dressing: Mix together:


    1 cup oil


    1 cup sugar


    ½ cup white vinegar


    2 tablespoons soy sauce


    1 teaspoon garlic powder








    Combine all ingredients just before serving

    Ingredients


    1 1/4 pounds boneless, skinless, chicken breasts (about 4 breasts)


    1 (1-pound) package sliced bacon


    2/3 cup firmly packed brown sugar


    2 tablespoons chili powder


    Directions


    Preheat oven to 350 degrees F.





    Cut chicken breasts into 1-inch cubes. Cut each bacon slice into thirds. Wrap each chicken cube with bacon and secure with a wooden pick. Stir together brown sugar and chili powder. Dredge wrapped chicken in mixture. Coat a rack and broiler pan with nonstick cooking spray. Place chicken wrap on rack in broiler pan. Bake 350 for 30 to 35 minutes or until bacon is crisp





    TOFFEE BROWNIES


    Ingredients


    1 (17.6-ounce) package brownie mix with walnuts


    Vegetable oil cooking spray


    3 (6-ounce) candy bars with almonds and toffee chips (recommended: Symphony brand)


    Directions


    Prepare the brownie mix according to package directions.








    Line a 13 by 9-inch cake pan with aluminum foil and spray with vegetable oil cooking spray. Spoon in half of the brownie batter and smooth with a spatula or the back of a spoon. Place the candy bars side by side on top of the batter. Cover with the remaining batter.








    Bake according to package directions. Let cool completely, then lift from the pan using the edges of the foil. This makes it easy to cut the brownies into squares.

    2 of my favorites:





    Tuna and noodles


    1 can of tuna


    1 can of cream of mushroom (or chicken) soup


    frozen peas


    Enough boxed mac and cheese to feed everyone (I've used up to 3 boxes without adding any more tuna)


    Boil your noodles. Add powdered cheese, tuna and soup, and peas. Stir. Great meal, cheep.





    Cheep Lo Mein


    Raman Noodles


    Frozen mized veggies (your choice)


    Cook noodles until almost done. Pour out most of the water. Add veggies and the seasoning package. Stir until veggies are heated through. If you want you can add cooked chicken. I don't, costs to much.





    I can feed my 6 boys (ranging from 12-19) for under $10 for everyone! And they eat like there is no tomorrow. These are my standby meals while money is short.What are your best frugal recipes that you have tried?
    A big egg scramble with whatever lunch meat/leftover meat is handy.





    Anything with ground chuck...since it can be stretched a few miles with noodles or rice





    A big tuna casserole with canned soups





    A bowl of oatmeal, or cereal, or grits.





    And the ';how'; of all these is pretty self-explanatory.
    We're a family of 6, so I know frugal. When my budget is tight, I make ground beef and macaroni:


    Brown up ground beef, along with a large onion. When cooked pour in ketchup. When heated through, add your cooked macaroni. I know, sounds cheap and awful, but you'd be surprised how good it is..tangy, sweet, and satisfying..the kids love it.


    Chicken and rice casserole (I use thighs, since they're cheap):


    Coat your chicken pieces in a combo of flour, paprika, and curry powder. Brown in a pan with olive oil and butter. When all chicken is brown, add 1 1/2 cups of rice to drippings in pan. Lay chicken down in a baking pan, add rice and 3 cups chicken broth. Now cover tightly with foil and bake for 45 minutes at 350.


    Both of those meals feed the entire family for under $6.00
    Rice/Red Beans


    Scrambled eggs with veggies/cheese


    Homemade pizza (use dough, sliced bread, english muffins)
    1 lb of hamburger meat


    1 box elbow macaroni


    2 cans crushed tomatoes


    grated cheese





    Brown hamburger meat.


    cook macaroni


    After meat is browned and macaroni is cooked,mix together add the tomatoes.Put in baking dish.put in 350 deg.oven till bubbly and cheese on top. cook till cheese is melted.This will feed at least six people for around $4. Add rolls and a small salad and you have a meal.

    Baked Peachy Chicken


    Place chicken pieces ( thighs and drumsticks are the most economical, but you can use whatever is on sale) in a baking pan, skin side up, and sprinkle with salt and pepper. Pour a large can of peaches over the top and bake for 45 minutes at 350. Serve over rice, withsomething green on the side- green benas, brocolli, spinach, green salad, etc.





    Italian Chicken


    Place chicken pieces as above in a baking pan and sprinkle with italian seasoning. Bake for 40 minutes at 350 andremove from oven, pour a jar of spaghetti sauce on top and bake for 10 minutes more, serve chicken and sauce with hot spaghetti and a green salad.





    Pepper Steak


    Thin slices of beef (chicken, shrimp, or pork can be used)


    Onion


    Pepper (green)


    oil to cover pan


    ginger


    garlic


    light Soy sauce


    Rice





    Saute garlic and ginger ( you can buy a jar of minced garlic and ginger already together) in oil until soft, add steak and cook until seared, add peppers and onions and cook until soft, add soy sauce and serve over hot rice.
    Taco Soup





    Ingredients:





    1 pound ground beef, browned and drained


    2 large yellow onions, diced and cooked with ground beef


    7 cups water (or use beef broth and omit concentrate below)


    1 can (about 15 ounces) corn kernels


    2 - 3 cups potatoes, diced


    7 oz. can of diced green chilis


    1 pkg Taco seasoning


    1 can (about 15 ounces) diced tomatoes


    1 can condensed cheddar cheese soup


    2 tbsp. beef broth concentrate such as “Better than Bouillon”


    1 can (about 4 ounces) sliced black olives


    Preparation:


    In a large pot combine water, corn, and potatoes. Bring to a boil. Simmer 20 minutes. Add green chilis, taco seasoning, tomatoes, and cooked ground beef %26amp; onions. Simmer 15 minutes more. Add cheese soup, olives, and beef bouillon. Simmer 5 more minutes. Makes 10-12 two-cup servings. Prep time: 45-60 minutes.





    Notes:


    The ingredients for this soup can be purchased for about $12.50 at most supermarkets, yielding a cost per serving of $1.00 to $1.25. Kris likes to serve this soup with sour cream and corn chips, which would increase your cost somewhat, but I prefer it without these garnishes. This recipe is easy to stretch by adding more corn, tomatoes, or potatoes, or even your favorite canned beans. This soup freezes well.





    For nearly a decade, this recipe has been a favorite among one of our groups of friends. It’s never going to win any awards for health or taste, but we like it. It’s good, cheap, hearty fare — perfect for autumn evenings.

    My favorite is an English dish known as Shepherd's Pie. It's very simple to make and has all the main food groups in it combined.





    1 or 2 lbs. of Ground Chuck


    1 Bag of Frozen Mixed Veggies


    1 Bag of Shredded Cheese


    1 Packet of McCormick Brown Gravy


    4 or 6 Baking Potatoes





    Preheat your oven to 425 degrees.


    While the oven warms up, brown the chuck in the skillet, cook the bag of veggies in a pot of water, boil the potatoes and prepare the gravy. Once everything on the stove has finished cooking; mash the potatoes and spread the beef in the bottom of a casserole dish. Then pour half of the gravy on top of the meat; add the veggies next and then layer of the shredded cheese (I use the whole bag). Layer the mashed potatoes on top of the veggies. Pour the remaining gravy over the top of the mashed potatoes and bake for about 30-40 minutes until the potatoes are browning on top.





    Let cool about 15 minutes and serve. It's the cheapest, easiest and tastiest dish I have ever found. Good Luck.

    What are the best cookie recipes to ship?

    I want something ';fancy'; (not just sugar cookies), but not TOO expensive to make, to send in the mail. It won't be an incredibly long journey (not being shipping to another country, just another state.) He's a chocolate lover. If there are any sort of brownies that fare well, let me know. I know they can't be soft types of cookies. I like trying new things though and want more than the chocolate chip cookie (although if need be, I will go with that.) He does NOT like oatmeal cookies or anything with cinnamon. Thanks!What are the best cookie recipes to ship?
    Really you can do any cookies you'd like. You just need to pack them correctly to get them to stay soft and moist without molding.





    Try this, if you are making bars or brownies cook them in a disposable pan. Then a bagel, cut in it halves and put the outside edges together so the cut sides are showing...like this )( then put them in a sandwich bag, seal it up and poke a few holes in it. You want just a few holes and nothing big enough that the bagel can slip out of. Set this on top of the bars and wrap the top of the pan with a double layer of foil. If the pan came with a lid, put that on too and wrap with foil again. Use a shipping box that's a little big so you can put crumpled newspaper or packing peanuts under and around the wrapped pan.





    For cookies, make them as usual, but pack them in layers in a disposable pan with wax paper between the layers. Make sure they are packed tightly so they don't move when the pan is tilted, shook or even dropped! Use bread slices instead of a bagel in the sandwich bag with holes in it. Bread works better with cookies...I'm not sure why. Wrap the pan in foil and ship the same.





    I've used this method to ship cookies and brownies all over the world including to the troops in the Middle East. So far, every batch has stayed soft and has not molded at all. The bread or bagel will get really hard and dry, but the good stuff will stay delicious.What are the best cookie recipes to ship?
    Bake these in one of those aluminum pans, cut into bars and leave right in pan, crunch up some wax paper an put it on top of the bars to hold in place and put your lid on top, tape shut and ship with lots of padding around it. It will get there safe and sound.

    Ingredients


    1/2 cup sour cream


    1/2 cup chopped, seeded %26amp; peeled cucumber


    1/2 cup chopped green onions, with tops, divided


    1/4 teaspoon garlic powder

    2 cups chopped fresh spinach leaves ( USE CANNED SPINACH JUST MAKE SURE YOU DRAIN ALL WATER)


    2 teaspoons dried parsley


    1/4 teaspoon dried mint leaves (crushed)


    1/2 teaspoon salt


    1/8 teaspoon pepper


    6 eggs, divided


    6 tablespoons water


    3 tablespoons butter, divided


    Sliced tomatoes and mint leaves as a garnish (optional)








    In small bowl, stir together sour cream, cucumber, 1/4 cup onions, and garlic powder until well mixed. Cover and chill.





    In 10-inch omelet pan or skillet over medium heat, cook beef (or lamb) until no longer pink. Drain. Add spinach, 1/4 cup of the remaining onions, parsely, mint, salt, and pepper. Cover. Cook, stirring occasionally, until spinach is tender. Set aside and keep warm.





    To make omelet:


    You will need two eggs, and two tablespoons of water for each omelet. So for three omelets beat together 6 eggs and 6 tablespoons of water until blended. Place a 10-inch omelet pan or skillet over medium heat. Put in 1 tablespoon of butter. Melt butter until a drop of water will sizzle in pan.





    Pour in 1/2 cup of egg mixture, and with an inverted pancake turner, carefully push cooked portions at edges toward the center so uncooked portions can reach the hot pan surface. Tilt and move the pan as necessary. When the top is thickened and no visable liquid egg remains, fill each omelet with 1/2 cup of beef or lamb mixture. With pancake turner, fold omelet in half and slide onto a serving plate. Garnish with tomatoes and mint, if desired. Serve immediately.
    Last week I made stuffed peppers and they were EXCELLENT! Check out allrecipes.com - that is where I got the recipe. Another quick idea is tacos. Also - I have tried cooking it with garlic power, worcestershire sauce, salt, pepper and thrown in onions, peppers and mushrooms. Add a little gravy and then mix it with cooked egg noodles - YUMMY!

    Recipes Using Ground Beef - Spanish Style








    This is a Spanish-Style Mince dish - it is one of the easy recipes using ground beef. It is really simple to put together but this is the secret...it has to be baked for a long time in a medium oven. This allows the spices and other ingredients to mingle and the dish to take on an intense flavor. Once the dish has cooked, I often leave the casserole dish in the oven overnight - the result is a meltingly rich, delicious dish. People say that they can knock up a mince dish in minutes - in my book, it is simply not possible. However, this one-pot dish makes two meals, one that you can eat now and one that you can freeze, so it is well worth the effort. This is also a great dish for a casual dinner party - served with tacos, tortillas and guacamole, it makes for informal, fun entertaining.





    Our recipes using ground beef have the further advantage of being budget-wise.





    Whilst this Spanish Style Mince dish contains spices, it is very mild, and our kids love it.





    A little effort


    Makes two meals, each serving 4 - 6 people


    Preparation time: 30 mins


    Cooking time: 2 - 3 hours





    Ingredients:





    2陆 lb / 1kg ground beef - use best quality, lean topside beef*


    about 8 tablespoons vegetable oil for shallow frying


    4 medium onions, finely diced


    2 large red bell peppers, finely diced


    2 cloves garlic crushed


    2 teaspoons ground cumin


    2 teaspoons ground paprika


    1 teaspoon cumin seed (optional)


    陆 teaspoon cayenne pepper


    4 large ripe tomatoes, roughly chopped


    4 tablepoons tomato paste


    1 cup beef stock





    You will need a large pan or casserole dish with a lid that can be used on top of the hob and inside the oven.





    Method:








    Heat the oven to 300掳 F / 150掳 C.


    On top of the hob, brown the minced meat in about 6 batches over a high heat. The meat needn't cook through, but it should look browned and fried. This is what gives flavor to the dish. (You don't want to put too much minced meat into the pan at a time, otherwise your oil loses heat and you just get a grey, watery mass of meat. Keep the meat aside.


    Fry the onions in one batch, until they are soft and a brown, caramel color. This, too, flavors the dish.


    Add the garlic and peppers to the onions and cook over medium heat for about 5 minutes.


    Add the cumin, paprika and cayenne pepper. Add the meat back to the pan. Add the tomatoes and tomato paste.


    Add the beef stock. Place a lid on the casserole dish and put in the oven. Cook for about 2 hours on a low heat, checking every half an hour that the mixture hasn't got too dry. Add water if necessary. You will notice that the gravy browns at the side of the casserole - scrape this down and stir into the minced meat. Once the 2 hours are up, turn the oven off and leave the dish inside the oven. I have often done this overnight - but if you don't have time, a couple of hours will do. This is not obligatory, but just adds to the richness of the dish.


    *If you are NOT using lean mince, it is advisable to make this dish in advance, following the instructions above. Then, cool the casserole in the refrigerator. The fat will solidify on top of the dish. Skim this off and discard. Then reheat or freeze the dish as you wish.





    Serving suggestions:





    Serve with tortillas, refried beans, guacamole and chopped fresh tomatoes and a big leafy salad.


    Serve with rice, roasted butternut squash and green beans.
    Broccoli rice casserole


    2 1/2 cups of instant rice uncooked


    2 cans of cream of mushroom or cream of celery soup (do not add the water it calls for)


    1 stick of butter melted


    1 16oz jar of cheese whiz, or any processed jarred cheese


    1 1 pound bag of frozen broccoli florets


    1/2 chopped onion (optional


    Melt the butter and cheese whiz and add the soup to this mixture. Add the remaining ingredients and mix well. It will be kind of gloppy, that is okay.


    Bake for 1/2 to 45 minutes at 350 degrees in a casserole dish. It may take a little longer. Just watch it and when it is hot, bubbling, and starting to brown on the edges it is done.


    You could add cooked chicken chunks to this before baking.
    Chili is a wonderful dish to serve to a crowd and it can be made a day or 2 ahead to free you up the day of the party. This site has some wonderful chili recipes. I hope they help.

    Ingredients:Serves 4 to 6








    1 tablespoon vegetable oil


    1 pound elbow macaroni


    8 tablespoons (1 stick) plus 1 tablespoon butter


    1/2 cup (2 ounces) shredded Muenster cheese


    1/2 cup (2 ounces) shredded mild Cheddar cheese


    1/2 cup (2 ounces) shredded sharp Cheddar cheese


    1/2 cup (2 ounces) shredded Monterey Jack


    2 cups half-and-half


    1 cup (8 ounces) Velveeta , cut into small cubes


    2 large eggs , lightly beaten


    1/4 teaspoon seasoned salt


    1/8 teaspoon freshly ground black pepper


    Preheat the oven to 350 degrees F. Lightly butter a deep 2 1/2-quart casserole.





    Bring the large pot of salted water to a boil over high heat. Add the oil, then the elbow macaroni, and cook until the macaroni is just tender, about 7 minutes. Do not overcook. Drain well. Return to the cooking pot.





    In a small saucepan, melt eight tablespoons of the butter. Stir into the macaroni. In a large bowl, mix the Muenster, mild and sharp Cheddar, and Monterey Jack cheeses. To the macaroni, add the half-and-half, 1 1/2 cups of the shredded cheese, the cubed Velveeta, and the eggs. Season with salt and pepper. Transfer to the buttered casserole. Sprinkle with the remaining 1/2 cup of shredded cheese and dot with the remaining one tablespoon of butter.





    Bake until it's bubbling around the edges, about 35 minutes. Serve hot.
