COME ON LADIES: what are your best recipes?

dont be like the guy from bushes baked beans and not tell me the secrets! LOL! i want to know some quick, good at home recipes. all your best ones......from your house to mine.....COME ON LADIES: what are your best recipes?
okay, you wanted my family favs? these are the recipes i give out the most often on yahoo answers, personal notes and all. (i've got more, but my answer would be pages long!)......





not a big fish fan, but i LOVE this recipe i got from my aunt





Parmesan Fish Fillets:


2/3 cup parmesan cheese


1/4 cup flour


1/2 tsp. salt


1/4 tsp. pepper


1 tsp. paprika (optional)


1/4 cup milk


1 egg; beaten


1/4 cup butter; melted


1/3 cup sliced almonds (i toast them slightly)


2 pounds tilapia; 1 1/4 inch thick





mix cheese, flour, salt, pepper, paprika togehter. beat eggs and milk together. coat fish in egg then in flour/cheese. lay in a glass baking dish. pour butter on top, then top with almonds.





bake at 350 degrees for 20 minutes; or until fish is firm and done.

this is my mother-in-laws recipe. they are SUPER yummy, really easy, and fairly cheap to make. for a little more flavor i either boil them in chicken stock, or cook them in the oven with a little salt, pepper, and garlic powder. you can also shred a store bought rotisserie chicken. i usually add more cheese than called for, and sometimes i mix regular jack with pepper jack cheese. i use one can of regular green chili enchlada sauce, and one jar of really good green salsa, pica de gaillo, orsalsa verde. it definately add alot of flavor that way





Creamy Chicken Enchiladas :


3-4 chicken breast, boiled, then cool and shred


1 small can green chilies


1 medium onion, chopped


1 can cream of chicken soup


1 can cream of mushroom soup


8 oz. shredded monterey jack cheese


2 cans green chili enchilada sauce


2 tbs. butter


tortillas


sour cream


salsa


olives





in sauce pan saute the onion in butter, add soups, chilies and 1 can of enchilada sauce, bring to boil, add shredded chicken, lower heat ans cook for 5 minutes.


put tortillas in microwave to soften for about 45 seconds





place about 2-3 tbl. of chicken mixture in tortilla and roll, place in baking dish. cover with other can of sauce and cheese. bake @ 350 degrees for 30-40 min. garnish with salsa, olives and sour cream

my husband is the biggest meat eater ever, but CONSTANTLY requests this meatless dish. it seems like alot of vegetables (about 2 cookie sheets) and sometimes i even add a little more than called for, but they really shrink down. make sure to use a good quality parmesan, as it is a key flavor component.





Pasta Primavera:


3 carrots, peeled and cut into thin strips


2 medium zucchini or 1 large zucchini, cut into thin strips


2 yellow squash, cut into thin strips


1 onion, thinly sliced


1 yellow bell pepper, cut into thin strips


1 red bell pepper, cut into thin strips


1/4 cup olive oil


Kosher salt and freshly ground black pepper


1 tablespoon dried Italian herbs or herbes de Provence


1 pound farfalle (bowtie pasta)


15 cherry tomatoes, halved


1/2 cup grated Parmesan





Preheat the oven to 450 degrees F.


On a large heavy baking sheet, toss all of the vegetables with the oil, salt, pepper, and dried herbs to coat. Transfer half of the vegetable mixture to another heavy large baking sheet and arrange evenly over the baking sheets. Bake until the carrots are tender and the vegetables begin to brown, stirring after the first 10 minutes, about 20 minutes total.





Meanwhile, cook the pasta in a large pot of boiling salted water until al dente, tender but still firm to the bite, about 8 minutes. Drain, reserving 1 cup of the cooking liquid.





Toss the pasta with the vegetable mixtures in a large bowl to combine. Toss with the cherry tomatoes and enough reserved cooking liquid to moisten. Season the pasta with salt and pepper, to taste. Sprinkle with the Parmesan and serve immediately.

you can use any nuts you like, really. i used mixed nuts the first time, but now i'm going to just use pecans and cashews. you will probably need to go to the bulk section of your store. make sure the nuts are roasted, but not salted.





Rosemary Roasted Mixed Nuts:


1 1/4 pounds mixed nuts


2 tablespoons coarsely chopped fresh rosemary leaves


1/2 teaspoon cayenne


2 teaspoons dark brown sugar


2 teaspoons kosher salt


1 tablespoon melted butter





Preheat the oven to 375 degrees F.


Place the nuts on an ungreased baking sheet and bake for about 10 minutes until they are warmed through. Meanwhile, combine the rosemary, pepper, sugar, salt and butter in a large bowl. Toss the warm nuts with the rosemary mixture until the nuts are completely coated.





the rosemary will smell really strong, and you might think you've used to much, but don't worry it's just the right amount. make sure to use fresh rosemary, dried will not work for the proper effect.

i'm a cranberry freak. this is SOOO easy and the combination of tart and sweet is incredible. my whole family begs for these during the holidays





Cranberry Squares:


1-1/2 cups quick-cooking oats


1-1/2 cups flour


1 cup firmly packed light brown sugar


1 tsp. Baking Powder


3/4 cup (1-1/2 sticks) cold butter, softened


1 cup Brandied Cranberry Sauce





Preheat oven to 350掳F.


Mix oats, flour, sugar and baking powder in large bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Press 2/3 of the oat mixture firmly onto bottom of 9-inch square baking dish; top with Brandied


Cranberry Sauce. Sprinkle with remaining oat mixture. Bake 30 minutes or until topping is lightly browned. Cool completely on wire rack. Cut into 24 squares to serve.COME ON LADIES: what are your best recipes?
1 can (18.5 oz) Progresso庐 Carb Monitor鈩?


chicken cheese enchilada-style soup


1 can (10 oz) Old El Paso庐 hot or mild enchilada sauce


2 cups shredded cooked chicken


2 cups shredded Monterey Jack cheese (8 oz)


10 corn tortillas (6 inches)


2 medium green onions, thinly sliced





Heat oven to 350掳F. In medium bowl, stir together soup and enchilada sauce. Spread 1 cup soup mixture in ungreased 11x7-inch baking dish.





In large bowl, mix 1 cup soup mixture with chicken and 1 cup of the cheese; reserve remaining soup mixture. On microwavable plate, stack tortillas and cover with paper towel; heat on High 1 minute to soften. Place 1/4 cup chicken mixture along middle of each tortilla. Roll up and place seam sides down in baking dish with sauce.





Pour remaining soup mixture over enchiladas. Sprinkle with remaining 1 cup cheese. Sprinkle green onions on top. Bake about 30 minutes or until cheese is melted and sauce is bubbly around edges.
Cheese and Garlic Biscuits





2 陆 cups Bisquick baking mix


戮 cup cold milk


4 tablespoons cold butter (1/2 stick)


录 teaspoon garlic powder


1 陆 cups grated cheddar cheese





Bush on Top:


2 tablespoons butter, melted


录 teaspoon dried parsley flakes


陆 teaspoon garlic powder


pinch salt





Directions:


1. Preheat your oven to 400 degrees.





2. Combine Bisquick with cold butter in a medium bowl using a pastry cutter or a large fork. You don't want to mix too thoroughly. There should be small chunks of butter in there that are about the size of peas. Add cheddar cheese, milk, and 录 teaspoon garlic. Mix by hand until combined, but don't over mix.





3. Drop approximately 录-cup portions of the dough onto an ungreased cookie sheet using an ice cream scoop.





4. Bake for 15 to 17 minutes or until the tops of the biscuits begin to turn light brown.





5. When you take the biscuits out of the oven, melt 2 tablespoons butter is a small bowl in your microwave. Stir in 陆 teaspoon garlic powder and the dried parsley flakes. Use a brush to spread this garlic butter over the tops of all the biscuits. Use up all of the butter. Makes one dozen biscuits.

SJ-SC-CA Incredible Chicken Salad





3 cups chicken breast (cooked and cubed)


1 cup pineapple (diced)


1/2 cup celery (diced)


1/2 cup mayonnaise


1/4 cup raisins


1/4 cup walnuts


1/8 cup dried cranberries


2 Tablespoons sweet onion (minced)


2 Tablespoons apple juice





Combine all ingredients in a bowl until well combined and chill. Serve with a lettuce garnish.





***You can use the chicken salad as a sandwich filling.***
Bacon Wrapped Chicken











4 Boneless Skinless Chicken Breasts


4 pieces of bacon


2 eggs beaten


2 cups of Italian style bead crumbs (I never measure this part out you may need more than 2 c.)


9x13 cake pan or baking sheet will do too


1 gallon sized baggie


Salt and Pepper to taste





Pre heat oven to 350*





In the gallon sized baggie, add your seasonings and bread crumbs. Shake to mix.


Dip your chicken into the beaten eggs


Place one piece of chicken at a time into the baggie and shake until evenly coated.


Wrap a piece of bacon around the coated chicken and place on baking sheet or in the cake pan.


Repeat until all your chicken is ready for the oven.


Place in the pre heated oven and bake until juices run clear-apx 1 hr.
Sorry, not a lady, but I have a meal set that will keep you changing things up for a little while. Tyson makes a sleeve of frozen chicken patties (you can get yours at walmart, or even the walmart brand). So lets use that as our base...





--Add swiss cheese and ham-Chicken Cordon Blue


--Add a table spoon of pizza sauce and mozzerella-chicken marinara


--Add ranch and bacon-YUM


--Add bbq sauce and some american cheese


--Add buffalo sauce on one side, and blue cheese or ranch on the other


--Add Alfredo sauce





There are a lot of ideas, there are some to wet your whistle the entire sleeve of chicken, and you can come up with others. Hope that helps.
Southern New Mexico Stacked Enchiladas





2 or 3 corn tortillas per person





red enchilada sauce from frozen red chile puree Hatch brand





2 pounds grated cojack cheese





1 medium onion minced





2 pounds extra lean hamburger browned





lettuce and tomato shredded and diced finely and mixed





2 eggs fried over medium per enchilada





heat skillet with vegetable oil depth about 1 inch. Dip tortilla in and flip over and remove to drain.





dip fried tortillas in red enchilada sauce and place in middle of micro safe plate.


On this put a hand full of meat, one of onions and 2 of cheese top with another tortilla. and more of the meat, onions and cheese. If three tortillas are desired do another.





Microwave on high for 1 minute Place fried eggs on top, pour about half cup enchilada sauce over this and put salad around the edges.





Not for sissies!!!
Black Forest Cake;





Make two 9'; round chocolate cakes according to package directions. Cool for 15 minutes.





Boil 1 cup of water, add 1 small box of cherry Jello. Stir well, then add 1/4 cup cold water.





Poke holes in cake w/ a fork, then pour Jello into holes. Refrigerate cakes for 4 hours.





Mix 1 tub of French Vanilla Cool Whip with 3/4 cup of powdered sugar and 3/4 cup sour cream. Frost the first layer of cake, sprinkle with chopped maraschino cherries. Place the other cake layer on top and frost. Garnish with more cherries and shaved chocolate.





Best cake ever, everyone loves it and it's super easy.
Beef Burgundy


2 lbs. cubed beef


1/2 pkg. onion soup mix


1 can cream of mushroom soup


1/2 cup burgundy or red wine.


Pour wine over beef in single layers in baking pan. Sprinkle with onion soup mix then spread mushroom soup over all. Cover tightly with foil and bake at 350 1 1/2-2 hours. Serve over noodles. Best of Luck.
