okay your start by frying chicken...Do Not deep fat fry it(just pan fry) and Do Not dip it in batter! When that is tottally done Take out the chicken and set it on a cutting board off to the side! Next put a T or 2 of butter in the pan! When that is melted add about a qiarter cup of flour to the butter and wisk very good. (no clumps) Add the seasonings of your choice, then boil. When i tis close to the way you like it Turn down the heat and cut up the chicken. Add the chicken, reheat ckn and serve ove rice or pasta!

Athenian Chicken:
2 parts pasta (linguine or spaghetti works well)
1 part cubed chicken breast
1 fresh tomato
basil
1-3 cloves of garlic (to taste)
olive oil
feta cheese
ground mustard seeds
ground pepper
sea salt
Start boiling the pasta first, the chicken will only take a few minutes.
Cut the chicken breast into 3/4 inch cubes, and put it in a large zip-lock bag. Pour a little oil in the bag, and then add a pinch of ground mustard seeds, ground pepper and sea salt. Seal the bag, and shake it all up. Pour the contents into a large, deep pan, and fry until cooked through.
While the chicken is cooking, cut up the tomato into 1/4 inch cubes, and put it in a large glass mixing bowl. Add the feta cheese, and basil.
Chop up your garlic cloves, and throw them in with the chicken right as it finishes cooking.
Once the chicken is finished cooking, remove the pasta from the pot it was boiling in with tongs, or a pasta spoon, and put it right into the pan with the cooked chicken. Keep it on the burner, set to low, and stir it all together for 2 minutes.
Dump the contents of the pan into the mixing bowl, and stir everything together.
Serve right from the bowl.. it's very tastey.
