i make a spaghetti meat sauce using textured vegetable protein , just soak it in massel beaf flavoured vegetable stock (the best vegan stock ever) and then drain completely. You will have a mince meat looking substance that you pan fry in olive oil, add garlic, fresh herbs, tomatoe paste, tomatoes (crushed) red wine, and simmer. Then add vegetables mushrooms, onions, and capsicum is good ad some basmic vinigar and serve on angel hair spaghetti.

You've got some good websites already, so I'll suggest a couple of cookbooks: ';Vegan with a Vengeance'; and ';Veganomicon'; by Isa Chandra Moskowitz and Terry Hope Romero are awesome. ';How it All Vegan'; by Tanya Barnard and Sarah Kramer is good, too. I just bought ';Fresh and Fast Vegan Pleasures'; by Amanda Grant because it's got several intriguing looking recipes, but I can't vouch for it because I haven't tried any yet.
