INGREDIENTS:


3 russet potatoes, sliced into 1/4 inch strips


cooking spray


1 teaspoon dried basil


1/4 cup grated Parmesan cheese


salt and pepper to taste





Preheat oven to 400 degrees F (200 degrees C). Lightly grease a medium baking sheet.


Arrange potato strips in a single layer on the prepared baking sheet, skin sides down. Spray lightly with cooking spray, and sprinkle with basil, Parmesan cheese, salt and pepper.


Bake 25 minutes in the preheated oven, or until golden brown.








OVEN-BAKED FRENCH FRIES





2 lg. baking potatoes


3 tbsp. grated Parmesan cheese


1/4 tsp. paprika





Scrub potatoes clean and cut lengthwise into thin wedges. Mix cheese and paprika together in a plastic bag Add potatoes a few at a time, toss to coat them.

You could cut the potatoes and put them on a cookie sheet and put them in the oven. It works pretty good.
Put enough vegetable oil in skillet to cover fries..be sure to have at least 1/4 inch of space at top so oil wont spill over.Heat oil so when u place fries in it it starts sizzling..not popping oil all over you.fry for 2 minutes and remove fries to paper towels to sit for 2 minutes.then return to oil to cook for another two minutes..this makes perfect fries..as u are removing fries from skillet place on paper towel and put salt , garlic salt, season salt, which ever is you favorite.
Fry the fries in oil in a regular skillet.Once the fries are crispy take them out cover fries with chilli,cheese,and onions.You will have the best tasting chilli cheese fries ever.
I make potato wedges in the oven all the time. This is what I do...





Wash anc cut the potatoes into wedges. Coat them in Olive Oil (I use Extra Virgin Olive Oil) and lay them in a single layer on a foil lined baking sheet. Sprinkle your favorite seasoning on the wedges and bake for about 15 minutes at 350. Turn them aver and sprinkle seasoning on the other side and bake 15-20 more minutes. Enjoy!!





You can also buy frozen fries and bake them.

Oven-Fried Potato Wedges

3 large baking potatoes


1/2 cup mayonnaise


1/2 teaspoon hot sauce


1/4 teaspoon onion salt


1/2 teaspoon House Seasoning, recipe follows


1/8 teaspoon black pepper


2 cups cornbread dressing mix





Preheat the oven to 375 degrees F.


Wash the potatoes and cut each into 6 thick wedges. Mix the mayonnaise with the hot sauce, onion salt, House Seasoning and pepper. Coat the potato wedges with the mayonnaise mixture and roll them in the dressing mix. Place in a greased baking dish and bake for 45 to 50 minutes, or until the potatoes are tender. Serve with your favorite dip.








House Seasoning:


1 cup salt


1/4 cup black pepper


1/4 cup garlic powder


Mix ingredients together and store in an airtight container for up to 6 months.

Baked Potato Wedges

4 large baking potatoes, unpeeled


4 tablespoons good olive oil


1 1/2 teaspoons kosher salt


3/4 teaspoon freshly ground black pepper


1 teaspoon minced fresh garlic


1 teaspoon minced fresh rosemary leaves





Preheat the oven to 400 degrees F.


Scrub the potatoes, cut them in half lengthwise, then cut each half in thirds lengthwise. You'll have 6 long wedges from each potato. Place the potatoes on a sheet pan with the olive oil, salt, pepper, garlic, and rosemary. With clean hands, toss all the ingredients together, making sure the potatoes are covered with oil. Spread the potatoes in a single layer with 1 cut-side down.





Bake the potatoes for 30 to 35 minutes, turning to the other cut side after 20 minutes. Bake until they are lightly browned, crisp outside, and tender inside. Sprinkle with salt and serve.

Herb and Cheese Oven Fries

3 all purpose potatoes, such as russet, cut into thin wedges


2-3 tablespoons extra-virgin olive oil, just enough to coat


1 teaspoon dried Italian seasoning or, 1/2 teaspoon each dried oregano, thyme, parsley


Salt and pepper


1/2 cup grated Parmigiano-Reggiano





Preheat oven to 500 degrees F.


Place potato wedges on a cookie sheet. Drizzle with just enough oil to coat. Season with Italian dried seasoning, salt and pepper. Roast potatoes and turn after 15 to 20 minutes. Sprinkle cheese liberally on potatoes and roast another 10 minutes, serve.

Crispy Baked Potato Wedges

5 Idaho potatoes, peeled and sliced into long wedges


Olive oil


BBQ spice mixture


Salt





Preheat oven to 450 degrees F.


Place the potato wedges in a saucepan with 2 quarts of cold salted water. Bring to a boil and then reduce to a simmer for approximately 5 minutes, or until a knife pierces through easily. Drain. In a large bowl, toss the wedges with olive oil. Place the BBQ spice and salt in a shallow dish and roll the wedges in it. Place the wedges on a sheet pan in single layer and roast for 15 to 20 minutes until crispy.
Just add some season salt to any old french fry and it will make all the world of a diffrence
The only way to cook french fries is to cook them twice. heat the saucepan with the cooking oil until it just starts to smoke and put the fries in.If the oil is too cool the potatoes will stick to the bottom of the pan, let them cook away and just before they start to brown remove them and let the oil drain off them. When its time to cook them for real heat the oil until very hot and put the fries in. They will brown in next to no time so be prepared to serve them very quickly.

Three-Flavor Fries


6 large baking potatoes, scrubbed (about 3 pound)


Nonstick cooking spray





Preheat oven to 500 degrees F.





Cut potatoes in half lengthwise. Place each half, cut side down, on cutting board and cut lengthwise into 1/4-inch-thick shoestrings. Place slices in a mixing bowl and toss with desired seasoning mixture (see accompanying recipes) or salt and pepper to taste.





Line 2 baking sheets with foil, and coat the foil lightly with nonstick cooking spray. Divide potatoes between the 2 pans and spread evenly. Bake about 10 minutes, remove from oven and turn over the potato slices. Return pans to the oven and bake another 10 to 15 minutes, until potatoes are lightly browned and fork-tender.





Onion-Paprika Fries


In a small bowl combine 2 teaspoons paprika, 1 teaspoon onion powder and 1/2 teaspoon salt. For a spicier mixture, add 1/4 teaspoon cayenne pepper.





Garlic-Pepper Fries


In a small bowl, combine 1/4 teaspoon garlic powder, 1/2 teaspoon freshly ground black pepper and 1/2 teaspoon salt. For more zip, double up on the garlic and pepper.





Chili Fries


In a small bowl, combine 1 teaspoon chili powder, 1 teaspoon cumin powder and 1/2 teaspoon salt. For more heat, add 1 teaspoon crushed red pepper flakes.





Home Fries





Serves 4.





6 potatoes


4 cloves garlic


1 onion


Bacon grease


Oregano


Basil


Paprika


Chives


Red pepper flakes


Black pepper


Salt





Cook the potatoes for 45 minutes at 400 degrees F.





Cut the potatoes into mouth-size chunks, leaving the skins on. Put these into a heavy skillet, preferably cast iron, that has the leftover bacon grease poured into it. Chop the garlic and onion; rough cut will suffice. Add these to the pan. Put over a high flame, add the spices (a sprinkling of each), and cook for approximately 10 minutes, shaking the pan to ensure that the potatoes brown up and warm through.





Oven Chili Fries





4 large russet potatoes


4 tablespoons olive or vegetable oil


1 tablespoon cumin


1/2 tablespoon chili powder


Salt and freshly ground black pepper, to taste





Preheat oven to 475 degrees F.





Cut each potato in half lengthwise, then cut each half into about six long wedges. Alternatively, cut each potato into thin rounds. A mandoline (a hand-operated device that evenly slices vegetables) also can be used to cut uniform wedges or rounds.





Transfer the cut potatoes to a large zip-lock plastic bag. Add the oil, cumin and chili powder. Seal the bag and shake to evenly coat the potatoes. Transfer the potatoes to a baking sheet and arrange in a single layer.





Bake for 50 minutes, or until the fries are crisp. For more even crisping, use a spatula to flip the fries after 25 minutes. Season with salt and pepper. Serve hot (and with gobs of ketchup).





Cheese Fries:





Oil for frying


1 bag frozen steak fries


1 cup shredded Cheddar cheese


1 cup shredded Monterey Jack cheese


3 slices bacon, cooked and crumbled


1/3 cup (or more) ranch dressing





Heat oil to 375 degrees F.





Fry steak fries until golden; drain. Preheat oven to 375 degrees F.





Arrange steak fries on oven-safe plate. Sprinkle on the Cheddar cheese, then the Monterey Jack cheese. Sprinkle crumbled bacon over the cheeses. Bake for 5 to 10 minutes or until the cheese has melted.





Serve with ranch dressing.





Crunchy Seasoned Oven Fries


Yield: 16 servings





4 eggs


3 cups cornflake crumbs


6 tablespoons chili powder


2 tablespoons garlic salt


5 1/3 pounds potatoes, cut into 1/2-inch wedges





Lightly beat eggs in a shallow bowl.





In another bowl, combine crumbs, chili powder and garlic salt.





Dip potato wedges into eggs. Dip into crumb mixture, coating completely.





Arrange potatoes in one layer on baking sheets coated with vegetable cooking spray. Bake in 375 degree F oven for 20 minutes. Turn potatoes; bake 10 to 15 minutes longer, until potatoes are browned and crisp and insides are tender when tested with pick. Serve immediately.
